No not real Possum – my son just likes the name.

Easy enough that a teenage boy can fix it, but ohhh so good!

Ingredients

  • 12 oz
    bow tie pasta
  • 2 Tbsp
    olive oil, extra virgin
  • 1 lb
    sweet italian sausage, casing removed and crumbled
  • 1/2 tsp
    red pepper flakes
  • 1/2 c
    onion, diced
  • 1/2 c
    bell pepper, chopped
  • 1/3 c
    black olives, cut
  • 3 clove
    garlic, minced
  • 28 oz
    can stewed tomatoes, undrained
  • 1 1/2 c
    heavy cream
  • 1/2 tsp
    sea salt
  • 1/2 tsp
    fresh ground pepper
  • 3 Tbsp
    fresh parsley, chopped
  • ·
    parmesan cheese, grated

How to Make Michael's Awesome Possum Pasta

Step-by-Step

  1. Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  2. Heat oil in a large, deep skillet over medium heat. Cook sausage and pepper flakes until sausage is evenly brown. Stir in onion, peppers, olives and garlic, cook until tender. Drain grease. Stir in tomatoes, cream, and salt/pepper. Simmer until mixture thickens, 8 to 10 minutes.
  3. Stir cooked pasta into sauce, and heat through. Sprinkle with parsley and parmesan cheese.
