large carrots,diced
red onion,chopped
1 Tbsp
bacon strips,diced
1 lb
boneless pork,cut into 1-inch cubes
1 pkg
(10 ounces) fresh spinach,torn
garlic cloves,minced
2 tsp
seasoned pepper
1 tsp
dried oregano
1/2 tsp
sodium-free salt
1/2 tsp
italian seasoning
1 c
shredded sharp cheddar cheese
1/2 c
shredded swiss cheese
3/4 c
shredded white cheddar cheese
4 Tbsp
grated parmesan cheese

How to Make Au Gratin Pork Casserole


  • 1In a large skillet,saute carrots and onion in oil and margarine until golden.Remove to paper towels to drain.
    In the same skillet,cook bacon over medium heat until crisp;remove to paper towels to drain.
  • 2In the drippings,cook pork until browned.Add spinach and garlic;cook and stir for 6 minutes.Drain thoroughly.Stir in seasoned pepper,oregano,sodium-free salt,italian seasoning,3/4 cup sharp cheddar cheese and bacon.
  • 3Place half of the carrot-onion mixture in a greased 1-qt.baking dish;top with pork mixture and remaining carrot-onion mixture(dish will be full).Sprinkle with cheeses.Bake,uncovered,at 350 degrees for 25-30 minutes or until pork is tender and cheeses is melted.
