Au Gratin Pork Casserole

2large carrots,diced

1red onion,chopped

1 Tbspmargarine

2bacon strips,diced
-
4boneless pork chops,sliced into strips
-
1 pkg(10 ounces) fresh spinach,torn
-
2garlic cloves,minced
-
2 tspseasoned pepper
-
1 tspdried oregano
-
1 tspsea salt
-
1/2 tspitalian seasoning
-
1 pkgcream cheese,softened
-
1 cshredded sharp cheddar cheese
-
1/2 cshredded swiss cheese
-
3/4 cshredded white cheddar cheese
-
4 Tbspgrated parmesan cheese
How to Make Au Gratin Pork Casserole
- Preheat oven to 350 degrees F.
- In a large skillet,saute carrots and onion in margarine over medium heat until golden for 5 minutes.
- In the same skillet,cook bacon over medium heat until crisp;remove to paper towels to drain.
- In a large saucepan,add bacon drippings,cook sliced pork until browned.Add spinach and garlic;cook and stir for 6 minutes.Drain thoroughly.
- Stir in seasoned pepper,oregano,sea salt,italian seasoning,cream cheese,sharp cheddar cheese and bacon.
- Place half of the carrot-onion mixture in a greased 1-qt.baking dish;top with pork mixture and remaining carrot-onion mixture(dish will be full).Sprinkle with cheeses.
- Bake,uncovered,for 25-30 minutes or until pork is tender and cheeses is melted.
