Heat margarine in a large skillet over medium heat.Add diced carrots and onion,saute for 5 minutes or until golden.Place them on a large plate.
In the same skillet,cook bacon over medium heat until crisp;remove to paper towels to drain.
In a large saucepan,add bacon drippings,cook sliced pork until browned.Add spinach and garlic;cook and stir for 6 minutes.Drain thoroughly.
Stir in seasoned pepper,oregano,sea salt,italian seasoning,cream cheese,sharp cheddar cheese and bacon.
Place half of the carrot-onion mixture in a greased 1-qt.baking dish;top with pork mixture and remaining carrot-onion mixture(dish will be full).Sprinkle with cheeses.
Bake,uncovered,for 25-30 minutes or until pork is tender and cheeses is melted.
