asian essentials: sweetly caramelized ground pork
This is an Asian dish, with some Western influences, provided by yours truly. Depending on your personal tastes, you might make this recipe with ground beef, chicken, or pork… up to you. Plus, you can stir in some veggies and make it a complete meal. My pork version was a hit with my guests, and I am considering putting it on my catering rotation. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 - 3 tablespoons grapeseed, or other non-flavored oil
- 1/2 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 medium chili, deseeded, finely chopped
- 1 pound ground pork
- 2 teaspoons powdered ginger
- 6 tablespoons coconut sugar, or brown sugar, packed
- 1 - 2 pinches red pepper flakes, or to taste
- 3 - 4 tablespoons Tamari sauce, or liquid aminos

Step 2This recipe calls for a white onion; however, I found it too overpowering, so I substituted a yellow onion. If you have a Vedalia onion, that would be perfect. I am using an Anaheim chili, but you could use something hotter or milder; that is your choice. You want about 3 tablespoons of chopped chili. I love coconut sugar, but this recipe would work just as fine with traditional brown sugar. Tamari sauce versus liquid aminos. I post this option in many of my recipes. Both of these ingredients are similar… they are a lite version of soy sauce. The main difference is that tamari sauce sometimes contains gluten, and liquid aminos do not.

Step 3Gather your Ingredients (mise en place).

Step 4Add the oil to a large skillet over medium-high heat.

Step 5When it begins to shimmer, add the onions, and chili.

Step 6Sauté until softened, and beginning to brown, about 3 - 5 minutes.

Step 7Add the garlic, and stir until fragrant, about 60 seconds.

Step 8Add the ground pork, and stir, breaking it up with a wooden spoon, until cooked through, about 2 - 3 minutes.

Step 9Add the sugar and sauce, then stir to combine.

Step 10Once combined, let sit in the pan until the liquid is almost evaporated, and the pork begins caramelizing, about 2 minutes.

Step 11Stir again, and let sit for about 30 seconds.

Step 12Repeat the stir and sit technique, until you like the level of caramelization.

Step 13Maybe once or twice more.

Step 15Serve over rice or noodles with some veggies, and crusty bread. Enjoy.
