apricots & cream sauce for pork chops

The sweetness of the syrup lends it self nicely to the pork, and the adobo gives this another level of flavor, and when you cook it over hot coals…well you have this “hmmm” flavor in the background. These are also good baked, or pan fried!

Ingredients

  • - 1 cup coffee cream “ unflavored”
  • - 1 cup maple syrup
  • - 2.5 ounces dried apricots “chopped”
  • - 1 tablespoon adobo sauce from caned chipotles in adobo

How To Make apricots & cream sauce for pork chops

  • Step 1
    Bring the cream and syrup to a simmer, stir.
  • Step 2
    Chop the apricots into small pieces. Add the apricots and adobo to the sauce and simmer for about 30 SECONDS. Stir and turn off the heat and let this cool. This will have thickened some what.
  • Step 3
    Put two thick bone in pork chops in a pan. With a meat tenderizer poke holes in the chops, you can also use a fork.
  • Step 4
    Pour the sauce over the chops and cover and place in the refrigerator for several hours.
  • Step 5
    Then place them on a hot grille, trying to keep some of the apricots on the meat, if possible.
