apricot pork chops

This had been one of the favorites of my Grandmother for a quick work week meal. I started making it soon after I was married and it has been a favorite now for many years. It is good with rice, and some additional chopped green onions as a garnish. Goes great with broccoli or green beans.

Ingredients

  • 8 ounces unpeeled apricot halves, drained
  • 1/4 cup apricot juice drained from the can
  • 1-1/2 pound pork chops
  • 1 can cream of chicken soup
  • 1/3 cup sour cream
  • 2 tablespoons green onions, chopped

How To Make apricot pork chops

  • Step 1
    Drain the apricots, reserving 1/4 cup syrup; cut each in half.
  • Step 2
    In skillet, brown the pork chops in small amount of olive oil; pour off all fat when they are browned on both sides.
  • Step 3
    Combine soup, sour cream, reserved syrup and green onions; add to the pork chops. Reduce heat.
  • Step 4
    Cover and simmer about 25 minutes. Stir occasionally.
  • Step 5
    Add apricots to pan and cook about 5 more minutes.
