apricot glazed pork roast
I was in the mood for something different and I have always wanted to try glazing a pork roast. So this is what I can up with :) Hubby said this is a def KEEPER!! Enjoy!

Ingredients
- 2 to 4 pounds pork loin
- 1/2 jar apricot preserves (plus 2 tablespoonful for the top of the roast)
- 1 1/2 tablespoons balsamic vinegar
- dash thyme, dried ( i used 2 shake's of the bottle)
- - salt and pepper to taste
How To Make apricot glazed pork roast

Step 1Preheat oven 375

Step 2Wisk together preserves and vinegar add thyme salt and pepper. Coat roast and place in oven safe pan. Take 2 tablespoonful of preserves and dot the top of the roast. Bake for 45 minutes to an hour.

Step 3Enjoy!! I paired this up with oven roasted garlic/EVOO red potatoes I Put them right in the pan with the roast!! YUMMY!!
