apple & herb stuffed pork chops

This is an easy camping recipe.. I make these 2-3 times a year... Goes great with rice...

Ingredients

  • 6 slices bacon
  • 8 1"thick - pork chops, center cut
  • 1/2 cup sweet onion chopped
  • 1/2 cup celery chopped
  • 1 cup butter,divided
  • 1/2 cup cream cheese
  • 2 cups sweet apples chopped.
  • 2 - hard boiled eggs diced
  • 1/2 cup raisins
  • 3 cups italian bread crumbs
  • 1/2 teaspoon dried sage and dried thyme
  • 1 - sweet apple
  • - salt and pepper to taste

How To Make apple & herb stuffed pork chops

  • Step 1
    you will need eather a 14" or 16" cast iron dutch oven.. and 2 Meat trivets to keep meat off the bottom of the oven.. in the pre-heated oven cook bacon till almost done. remove,drain,and cut up bacon and set aside.
  • Step 2
    add 1/4 cup of butter to bacon drippings. add onions and celery to oven cook till tender. for the stuffing . In a large mixing bowl add apples,eggs raisin,cream cheese,bacon,bread crumbs,butter and sage and thyme. mex well and set aside.
  • Step 3
    Cut a large pocket in the side of each pork chop,( do not cut all the way through ). sprinkle inside and out side of each chop with salt & pepper. fill each pocket with stuffing.
  • Step 4
    Place 2 meat trivets in the botom of the dutch oven....stand chops stuffing side up in a circle inside the oven...Place 1 whole peeled apple in the center of the oven...pour 1/4 cup of water into the bottom of the oven,( I use vegge stock )... cover and bake over med fire for 45-60 min... i serve this with Peachy wild rice...
