Ingredients
- 2-3 tablespoons olive oil
- 1.5 pounds ground chuck
- 1 pound sausage
- 3 - zucchinis, cut in 1/2 inch cubes
- 4 - garlic cloves, chopped
- 1 - onion, sliced
- 1 cup long grain rice, uncooked
- 14.5 cans tomatoes, chopped
- 2 teaspoons fennel seeds
- 1/2 teaspoon red pepper flakes
- 1 tablespoon fresh basil leaves
- 1 tablespoon fresh rosemary
- 1 - pepper, freshly ground
- 3 cups chicken broth
- 1 cup freshly grated parmesan cheese
How To Make all-in-one sausage and zucchini casserole

Step 1Preheat oven to 375 degrees.

Step 2Heat the oil in a large 5 quart dutch oven.

Step 3Add the ground chuck and sausage.

Step 4Brown. Drain and set aside.

Step 5In the dutch oven in the oil, saute the zucchini, garlic, and onion until soft and translucent.

Step 6Add the rice and cook until opaque, about 2 minutes.

Step 7Add the tomatoes, fennel, red pepper flakes, basil, rosemary, salt, pepper and chicken broth.

Step 8Heat through until just to the boil.

Step 9Stir in the meat.

Step 10Transfer to a rectangular baking dish.

Step 11Top with the parmesan cheese and bake 1 hour.

Step 12Top with additional parmesan cheese if desired, when served.

Step 13Maybe made 1 to 2 days ahead. The casserole freezes. Defrost and reheat.
