All-In-One Sausage And Zucchini Casserole

2-3 Tbsp
olive oil
1.5 lb
ground chuck
1 lb
zucchinis, cut in 1/2 inch cubes
garlic cloves, chopped
onion, sliced
1 c
long grain rice, uncooked
14.5 can(s)
tomatoes, chopped
2 tsp
fennel seeds
1/2 tsp
red pepper flakes
1 Tbsp
fresh basil leaves
1 Tbsp
fresh rosemary
pepper, freshly ground
3 c
chicken broth
1 c
freshly grated parmesan cheese


1Preheat oven to 375 degrees.
2Heat the oil in a large 5 quart dutch oven.
3Add the ground chuck and sausage.
4Brown. Drain and set aside.
5In the dutch oven in the oil, saute the zucchini, garlic, and onion until soft and translucent.
6Add the rice and cook until opaque, about 2 minutes.
7Add the tomatoes, fennel, red pepper flakes, basil, rosemary, salt, pepper and chicken broth.
8Heat through until just to the boil.
9Stir in the meat.
10Transfer to a rectangular baking dish.
11Top with the parmesan cheese and bake 1 hour.
12Top with additional parmesan cheese if desired, when served.
13Maybe made 1 to 2 days ahead. The casserole freezes. Defrost and reheat.
