Ingredients

  • SPICY SHORT RIBS
  • 3 pounds beef short ribs
  • MARINADE
  • 1/2 cup hoisin sauce
  • 3 tablespoons soy sauce
  • 2 tablespoons rice wine or saki
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/2 teaspoon sambal olek
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons brown sugar
  • SQUASH
  • 4 acorn squash cut in half and scoop out the seeds.

How To Make acorn squash stuffed with spicy short ribs

  • Step 1
    Mix the marinade ingredients together and add the ribs. Let marinate for at least 3 hours.
  • Step 2
    Preheat the oven 375 degrees. Brush the squash halves with olive oil and place on a baking sheet cut side down. Bake for 30 to 45 minutes. Untilj a fork goes through easily.
  • Step 3
    Meanwhile place the ribs and marinade in a instant pot. Secure cover and cook on high for 40 minutes. Quick release. Remove the ribs to a cutting board.
  • Step 4
    Remove the ribs from the bone and discard fat. Fill each squash half with rib meat and serve
