Ingredients
- SPICY SHORT RIBS
- 3 pounds beef short ribs
- MARINADE
- 1/2 cup hoisin sauce
- 3 tablespoons soy sauce
- 2 tablespoons rice wine or saki
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1/2 teaspoon sambal olek
- 1 teaspoon toasted sesame oil
- 2 tablespoons brown sugar
- SQUASH
- 4 acorn squash cut in half and scoop out the seeds.
How To Make acorn squash stuffed with spicy short ribs

Step 1Mix the marinade ingredients together and add the ribs. Let marinate for at least 3 hours.

Step 2Preheat the oven 375 degrees. Brush the squash halves with olive oil and place on a baking sheet cut side down. Bake for 30 to 45 minutes. Untilj a fork goes through easily.

Step 3Meanwhile place the ribs and marinade in a instant pot. Secure cover and cook on high for 40 minutes. Quick release. Remove the ribs to a cutting board.

Step 4Remove the ribs from the bone and discard fat. Fill each squash half with rib meat and serve
