Ingredients
- - crust
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 cup soft butter
- 2 large eggs
- - sausage & cheese filling
- 1 cup ricotta cheese
- 8 ounces mozzarella cheese, diced
- 3 ounces romano cheese, grated
- 2 large eggs, beaten
- 2 - links of italian sausage, removed from casings
- 1 pound bulk pork sausage
- 2 ounces italian salami, diced
- 1 large white onion, finely chopped
- 1/3 teaspoon of each, dried oregano, dried basil
- 1 clove garlic, minced or pressed
- 1/4 cup italian parsley, chopped
- 1 - egg white, beaten
- 1/4 cup parmesan cheese, grated
How To Make a sausage pie

Step 1Combine the flour and baking powder in a mixing bowl. cut in the butter until well combined. Stir in the eggs. Mix into a dough. Set aside.

Step 2Cook sausage in a skillet with the onions and garlic. Drain off fat. Set aside.

Step 3Mix all the cheeses and the beaten eggs, stir in the sausage, add the salami, oregano basil and parsley.

Step 4Roll out half the dough into a 12" circle. Place on a lightly oiled pie plate. Spread cheese filling on dough to within an inch from the edge.

Step 5Roll out top crust. Fit over filling, sealing edges. Brush with egg white.

Step 6Bake at 350^ for 30-35 minutes before serving.

Step 7* a small piece of dough can be reserved for decorating the top crust. Cut into diamonds, circles, hearts or braids, or birds..and place on top crust with a bit of egg white on the underside to hold em in place while the pie bakes.
