snack essentials: rustic silver dollar pizza bites
I call these “rustic” because as you can see from the photos, I pretty much threw them together, and chucked them in the oven. Easy/Peasy. They were made for our Thursday movie matinee and, believe me when I say, they did not last long. In fact, I think they were almost gone before the opening credits finished. You can mix up the cheeses, and meats, and use a sauce of your choosing. Have fun with them. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 2 - 3 ounces mozzarella, freshly shredded
- 2 - 3 ounces sharp cheddar, freshly shredded
- 1 - 2 ounces parmesan, freshly grated
- 2 - 3 ounces pepperonis, diced, or other protein
- 4 - 5 tablespoons pizza or spaghetti sauce
- 4 - 5 medium flour tortillas
- non-flavored oil, as needed

Step 2Shredded Cheese I like to shred my own cheeses from a block, because it is fresher, and pre-shredded bags of cheese cost more, plus they contain items to keep the cheese from clumping, like cellulose. Cellulose an organic compound that is a primary structural component of plant cell walls. While there is no evidence that it harms humans, it cannot be digested by the body. Freshly grated cheese does not contain cellulose. Full Stop.

Step 3The Sauce I think the sauce really makes this dish, so choose something that you would love to use on a regular pizza. I like tart and a bit spicy, so I make my own, but there are a lot of grocery versions of pizza/spaghetti sauce that are pretty good.

Step 4The Tortillas I use small tortillas (6 inches), and I can get three bites out of each one. The bites are just under 3 inches in diameter. So, use a cookie cutter of the same diameter.

Step 5Gather your Ingredients (mise en place).

Step 6Place a rack in the middle position, then preheat the oven 350f/125c

Step 7Lay out your flour tortillas, and cut out the bites. You can leave them flat, or put them into a mini cupcake pan, or a mini tart pan, like I am using.

Step 8Brush with a bit of oil, place on a parchment-lined baking sheet, and pre-bake for about 8 – 10 minutes. Keep an eye on them, and do not let them overly brown.

Step 9Remove from the oven, and allow to cool for about 5 minutes.

Step 10Raise the oven temperature to 425f/220c.

Step 11Place some diced pepperonis on the bites, and sprinkle on a bit of the parmesan cheese. Pepperoni, sausage, or just cheese... up to you.

Step 12Put on about a teaspoon of sauce, and spread out.

Step 13Sprinkle some of the other cheeses on top.

Step 14Place into the preheated oven, and bake until the cheese is bubbly, and begins to brown, about 15 – 18 minutes.

Step 16The sauce will be hot, so allow to cool for a bit, and then serve. Enjoy.
