portuguese chorizo pizza

This is an Emeril Lagasse recipe for some great pizza with a Portuguese influence. Upon researching, I found that chorizo is commonly used in both Portugul and the Azores Islands. This pizza is hand-formed and meant to be very rustic. Enjoy!

Ingredients

  • - pizza dough
  • 1 cup tomato sauce
  • 1/2 pound smoked chorizo sausage, sliced
  • 8 ounces good melting cheese (you can use the stand-by mozzarella if you'd like), grated

How To Make portuguese chorizo pizza

  • Step 1
    Preheat oven to 500 degrees F. Pull apart and gently stretch pizza dough into 6 inch rounds. (Making 2 pizzas.)
  • Step 2
    Put each 6 inch round of pizza dough on a separate greased baking sheet or pizza stone. Pat each out to a 10 to 12 inch round, about 1/8 inch thick.
  • Step 3
    Spread 1/2 cup of the tomato sauce on top of each round, leaving about a 1 inch border. Arrange the chorizo on top of the sauce and top with a thin layer of the cheese.
  • Step 4
    Bake the pizzas until they are golden brown and the cheese is bubbly - approx. 20 minutes., switching the pans from top to bottom after about 10 minutes. Serve and enjoy!
