My apologies to my Hispanic friends. This is my recipe, not an authentic dish. Sorry, there are no amounts of ingredients. Go wild !!!

Ingredients

  • - 10 inch tortillas
  • - salsa
  • - sour cream
  • - shredded cheddar cheese
  • - shredded monterey jack cheese
  • - chicken breast meat, cut into bite sized pieces
  • - red and green sweet peppers, sliced
  • - sliced onions

How To Make mexican pizza

  • Step 1
    Saute chicken bites in oil with garlic powder, salt and pepper. Remove from skillet.
  • Step 2
    Saute sweet peppers and onions sliced in same skillet. Remove.
  • Step 3
    Place a small amount of Cheddar cheese on one tortilla. Top with second tortilla. In a non- stick skillet, brown the double tortilla on both sides. Cover the top of the double tortilla with Jack Cheese.
  • Step 4
    Top Jack cheese with sauteed peppers and chicken bites.
  • Step 5
    Cover skillet and cook until cheese is melted. Remove from skillet. Serve with Salsa and Sour cream
