Hot, cheesy pizza just in time for the second half of the game

Ingredients

  • 1 teaspoon olive oil
  • 1 small onion, cut into thin strips
  • 2 cloves garlic, minced
  • 2 small green bell peppers, cut into thin 1- inch strips
  • 1 teaspoon basil, crushed
  • 1/4 teaspoon thyme
  • 1/4 teaspoon red pepper flakes
  • 4 large plum tomatoes, thinly sliced
  • 2 - (6- inch) pita breads, split horizontally
  • 2 cups (8 ounces) shredded mozzarella cheese

How To Make halftime pita pizzas

  • Step 1
    Add oil to large skillet and heat to medium. Cook onion and garlic in skillet for 2 minutes, stirring occasionally.
  • Step 2
    Add pepper strips; cook 5 minutes or until vegetables are tender, stirring occasionally; stir in basil, thyme and red pepper flakes.
  • Step 3
    Layer tomatoes evenly over pita rounds; top with warm vegetable mixture. Sprinkle evenly with cheese.
  • Step 4
    Broil 5 to 6 inches from heat source 1 minute or just until cheese is melted.
