olive oil
1 small
onion, cut into thin strips
2 clove
garlic, minced
2 small
green bell peppers, cut into thin 1- inch strips
1 tsp
basil, crushed
1/4 tsp
1/4 tsp
red pepper flakes
4 large
plum tomatoes, thinly sliced
(6- inch) pita breads, split horizontally
2 c
(8 ounces) shredded mozzarella cheese

How to Make Halftime Pita Pizzas


  • 1Add oil to large skillet and heat to medium. Cook onion and garlic in skillet for 2 minutes, stirring occasionally.
  • 2Add pepper strips; cook 5 minutes or until vegetables are tender, stirring occasionally; stir in basil, thyme and red pepper flakes.
  • 3Layer tomatoes evenly over pita rounds; top with warm vegetable mixture. Sprinkle evenly with cheese.
  • 4Broil 5 to 6 inches from heat source 1 minute or just until cheese is melted.
