- 1 tablespoon olive oil
- 1 pound ground beef
- 1 package taco seasoning (1 oz)
- 1 can refried beans (15 oz)
- 1 cup shredded Mexican cheese blend
- 1/4 cup sliced jalapenos, optional
- 2 - green onions, finely chopped
- 1 cup finely diced tomatoes
- 2 tablespoons taco sauce (store-bought or copycat Taco Bell sauce)
- salt and pepper, to taste
- salsa, sour cream, and/or guacamole, optional

Step 1Preheat the oven to 375 degrees F. Brush both sides of each tortilla with olive oil.

Step 2Place the tortillas on baking sheets, two per sheet. Bake for 8-10 minutes or until crispy. Set aside. (You will likely need to do this in two batches to bake all 8 tortillas.)
