Think outside of the "pizza" box! This is a flavorful twist on your regular pizza!

Ingredients

  • 2 large flour tortillas
  • 2-3 tablespoons olive oil, or as needed
  • 4 tablespoons chipotle mayo
  • 2 tablespoons bbq sauce of your choice
  • 1/2 large red pepper, ribs removed and finely chopped
  • 1/2 large orange pepper, ribs removed and finely chopped
  • 1/2 large jalapeno pepper, seeded, ribs removed and finely chopped
  • 1/4 medium red onion, finely chopped
  • 2 large roma tomatoes, seeded and cubed
  • freshly ground black pepper, to taste (i always use mixed peppercorns)
  • garlic salt, to taste
  • 1 large chicken breast, poached and shredded
  • 2/3 cup pineapple chunks
  • 1 cup mexicana cheese, grated
  • 1 cup monterey jack cheese, grated
  • 12 small black olives, sliced
  • 1/2 tablespoon dried basil, or to taste

How To Make chipotle chicken tortilla pizza

  • Step 1
    Preheat oven to 375ºF. Place tortillas on baking sheet. With a pastry brush, lightly brush each side of the tortilla with olive oil. Bake 8 to 10 minutes, flipping over halfway through cooking time. The tortillas should be golden and crisp when done.
  • Step 2
    Spread *Chipotle Mayo then top with peppers, onion, tomato and seasonings. Top with shredded chicken and then add cheeses, olives and basil. Bake tortilla pizza in preheated oven for 8 to 10 minutes or until cheeses have melted. Transfer to a cutting board, slice and serve
