This recipes takes 2% Velvetta and low-fat parmesan well. I like to use these to try to cut back on the fat a little. I also like to go a little heavy on the pizza sauce. You can use 1 lb. ground sausage or 1 lb. ground turkey for this as well.

Ingredients
- 1 1/2 cups penne pasta, uncooked
- 1 pound ground beef
- 4 small zucchini, cubed
- 1 - red pepper, chopped
- 1 can pizza sauce
- 1/2 pound Velvetta, cubed
- - parmesan cheese
How To Make zucchini penne bake

Step 1While cooking pasta brown meat in lg. deep skillet on mid-heat heat. Drain and return to skillet.

Step 2Stir in zucchini, peppers and sauce; cook 5 to 6 minutes or until veggies are tender, stirring occasionally. Remove from heat.

Step 3Drain pasta. Add to meat mixture with Velvetta; stir until well blended. Spoon into 9x13 dish sprayed with nonstick. Sprinkle with parmesan. Bake 15 minutes.
