This recipes takes 2% Velvetta and low-fat parmesan well. I like to use these to try to cut back on the fat a little.

I also like to go a little heavy on the pizza sauce.

You can use 1 lb. ground sausage or 1 lb. ground turkey for this as well.

    penne pasta, uncooked
  • 1 lb
    ground beef
  • 4 small
    zucchini, cubed
  • 1
    red pepper, chopped
  • 1 can(s)
    pizza sauce
  • 1/2 lb
    Velvetta, cubed
  • ·
    parmesan cheese

How to Make Zucchini Penne Bake


  1. While cooking pasta brown meat in lg. deep skillet on mid-heat heat. Drain and return to skillet.
  2. Stir in zucchini, peppers and sauce; cook 5 to 6 minutes or until veggies are tender, stirring occasionally. Remove from heat.
  3. Drain pasta. Add to meat mixture with Velvetta; stir until well blended. Spoon into 9x13 dish sprayed with nonstick. Sprinkle with parmesan. Bake 15 minutes.
