zucchini and spaghetti pancakes

Ingredients

  • 8 ounces spaghetti (1/2 box)
  • 1/4 cup plus 1 tablespoon olive oil
  • 1 medium onion chopped
  • 1 - zucchini, grated
  • 2 medium eggs, beaten
  • 3/4 cup parmesan cheese
  • - kosher salt
  • 1 cup marinara sauce

How To Make zucchini and spaghetti pancakes

  • Step 1
    Cook the spaghetti according to package directions.
  • Step 2
    In the meantime heat the 1/4 tbsp. olive oil in a large skillet pan over medium heat.
  • Step 3
    Add the onion, zucchini and cook until soft, approximately 8 minutes.
  • Step 4
    Once the veggies are cooked, add them with the spaghetti, eggs and Parmesan.
  • Step 5
    Season with 1/4 tsp. salt. Heat the remaining 1/4 cup of oil in a large pan over medium high heat.
  • Step 6
    Working in batches cook 3/4 cup portions of the spaghetti mixture until golden and crisp, approximately 3-4 minutes per side.
  • Step 7
    Serve with the marinara sauce.
