I love ziti pasta. This recipe is delicious on its own; it's also great with meatballs or chicken or shrimp--what trips your taste buds tonight? Your home will smell like a fine Italian restaurant when you are cooking this! What can be better than that! September 14--I made this yesterday, and it is a great summer dish--fresh mushrooms, fresh tomatoes, fresh zucchini, fresh onions--a summer festival of tastes! I added 12 oz. of Italian style meatballs. We served it with fresh cooked corn and a salad. It was GREAT!

Ingredients

  • 1 pound ziti pasta (or whatever type you like!)
  • 1/3 cup olive oil
  • 1 clove garlic, chopped (can used jarred garlic)
  • 1/4 cup butter
  • 2 small zucchini, quartered and sliced
  • 1 - onion, chopped
  • 1 - tomato, chopped
  • 8 ounces mushrooms, fresh, sliced
  • 1 tablespoon dried oregano
  • 1 tablespoon paprika
  • - salt and pepper to taste

How To Make zippy ziti

  • Step 1
    Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions or until al dente; drain. "Al dente" means the pasta is tender, but still firm to the bite.
  • Step 2
    In a large skillet over medium heat, melt the butter with the olive oil and saute the garlic, zucchini, onion, tomato, mushrooms, oregano, paprika, salt and pepper for 15 to 20 minutes. Combine the pasta and sauteed vegetables and toss.
