Roasted garlic infused oil, with Parmesan cheese, tomatoes and fresh herbs make this pasta dish perfect served hot or cold.

Ingredients

  • 1 package whole grain spaghetti noodles
  • 2 cans diced tomatoes, drained
  • 1-2 cup freshly grated parmesan cheese
  • 1-2 - whole garlic bulbs
  • 1 tablespoon fresh oregano, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup plus 1 tbsp evoo
  • 1 teaspoon garlic powder or garlic salt (optional)

How To Make whole grain spaghetti with roasted garlic sauce

  • Step 1
    Cut the top off of the garlic bulb, place on a sheet of tin foil (large enough to wrap around the garlic), pour 1 tbsp of oil over the garlic, wrap up with the foil, and roast in the oven at 400 degrees for 30-40 minutes.
  • Step 2
    When done, let cool, then squeeze the garlic out of its shell into a small bowl. Add the ½ cup olive oil, the parsley, basil, oregano, salt and pepper. Blend well and let sit to infuse the flavors (can be made ahead of time and left in refrigerator as well).
  • Step 3
    Meanwhile, cook noodles as directed on package, strain and transfer to a large bowl. Add the tomatoes, parmesan cheese and garlic oil. Toss to coat and blend. Serve hot or cold.
  • Step 4
    NOTE: If you want more garlic flavor, add the teaspoon of garlic powder or garlic salt to the oil blend, or just mix into the pasta. OTHER OPTIONS: Add shredded chicken or shrimp. Or saute some of your favorite vegetables and toss in as well.
