vegetarian stuffed shells

Came up with this on the fly. I don't eat meat so it had to "vegetarian-able" and I think the vegetarian version is way better than meaty stuffed shells.

Ingredients
- 16 - large pasta shells
- 2 cups ricotta cheese
- 1/2 cup chopped herbs (thyme, oregano, marjoram)
- 2 cups homemade (or not) tomato sauce [see my yummy tomato sauce recipe]
- 1 cup chopped white mushrooms
- 2 tablespoons butter
- - salt (to taste)
- - pepper (to taste)
- 1/2 cup grated mozzarella cheese
How To Make vegetarian stuffed shells

Step 1preheat oven to 375

Step 2boil large pot of hot water, once boiled, add salt and the pasta shells cook about 20 minutes or until soft

Step 3chop herbs and mix in a bowl with ricotta and a few pinches of salt

Step 4sautee chopped mushrooms in butter, when soft, reduce heat to low and mix in tomato sauce

Step 5in a large pyrex dish, sprinkle olive oil

Step 6drain shells and spoon a heaping tablespoonfull of the ricotta mixture into the shells

Step 7arrange all 16 shells in pyrex dish and pour tomato sauce over them, sprinkle mozzarella cheese on top

Step 8cook for about 10 minutes (check at 8)
