ultimate spaghetti casserole

This is a really easy casserole dish to make, and it seems to be my family's favorite comfort food on chilly, stormy days. The casserole itself is usually enough to satisfy our carvings. But when I have the time, I usually serve it with a loaf of fresh baked garlic bread and a delicious side dish of garlic green beans

Ingredients

  • 1 (8-oz) package spaghetti noodles
  • 1 pound - lean ground beef
  • 1/2 cup - chopped onion
  • 1 small green bell pepper, chopped
  • 3 cloves - garlic, minced
  • 1 (15-oz) can diced tomato (do not drain)
  • 2 tablespoons tomato paste
  • 1 (8-oz) can mushroom stems and pieces, drained
  • 1 teaspoon salt, or to taste
  • 1 1/2 teaspoons black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano leaves
  • 1/2 teaspoon chili powder (or to taste)
  • 4 ounces reduced-fat cream cheese
  • 1 cup - sour cream (an 8-oz container)
  • 3 - green onions, chopped
  • 1/2 cup - cheddar cheese, shredded
  • 1 cup - monterey jack cheese, shredded

How To Make ultimate spaghetti casserole

  • Step 1
    Break the dry spaghetti noodles in half, and cook spaghetti according to package directions. Drain and set aside.
  • Step 2
    Spray a 9x13-inch baking dish with nonstick cooking spray; set aside.
  • Step 3
    In a large skillet, cook the beef, onion, bell pepper and garlic over medium heat for about 6 minutes or until no pink remains in beef, breaking up beef into crumbles as it cooks. Drain liquid from skillet.
  • Step 4
    Stir diced tomatoes, tomato paste, mushrooms, salt, pepper, basil, oregano, and chili powder into the beef mixture. Bring mixture to a low boil. Then reduce heat to low, and let simmer 20 minutes, stirring occasionally.
  • Step 5
    In a small bowl, stir together cream cheese, sour cream and green onions until smooth; set aside.
  • Step 6
    Preheat oven to 350°F.
  • Step 7
    To assemble the pie, place cooked spaghetti in the baking dish, making sure to cover the entire bottom. Spoon the cream cheese mixture on top of the noodle layer, and use the back of a spoon to cover as much of the noodle layer as possible. Spread the meat mixture on top. Distribute the cheddar on top, then top with Monterey Jack cheese. Cover baking dish with foil.
  • Step 8
    Bake for 25 minutes. Remove foil, and bake 5 to 10 minutes longer or until cheese is bubbly.
