Ingredients
- 4 large egg yolk at room temp
- 1 cup grated parmigiano-reggiano
- 1 cup grated romano cheese
- 3 ounces bacon chopped
- salt
- 6 ounces pasta of choice. i used shells
How To Make two yolk carbonara

Step 1Whip 2 egg yolks with the cheese and add some cracked black pepper. Set aside

Step 2Cook the bacon until the fat has rendered and the bacon is crisp. Remove from heat and set aside

Step 3Bring a large pot of water to a boil and add some salt. Add the pasta and cook until the pasta is al dente. Drain and reserve 1/2 cup pasta water

Step 4Add the pasta to the pan with the bacon. Mix 1/4 cup of the pasta water with the egg, cheese mixture. Add the mixture to the pan with the pasta and bacon. Toss adding pasta water a tbsp at at time until a glossy sauce forms.

Step 5Plate the pasta on two plates and top each with the remaining egg yolk

Step 6When ready to eat stir in the egg yolk
