This recipe makes me think of the one time in my life that I knew someone half-way famous (the Oklahoma Governor) and, believe it or not, when we went to the Governor's Mansion for dinner, this is what they served!

And, yes, there was a swimming pool in the shape of Oklahoma. :)

This particular recipe comes from Southern Living's Comfort Food book without much modification.

Ingredients

  • 16 oz
    vermicelli
  • 1/2 c
    chicken broth
  • 4 c
    chopped cooked turkey (or chicken if you prefer)
  • 1 can(s)
    cream of mushroom soup
  • 1 can(s)
    cream of chicken soup
  • 1 can(s)
    cream of celery soup
  • 1
    8 oz container of sour cream
  • 1
    6 oz jar sliced mushrooms, drained
  • 1/2 c
    shredded parmesan cheese
  • ·
    salt and pepper to taste
  • 2 c
    shredded cheddar cheese

How to Make Turkey Tetrazzini

Step-by-Step

  1. Cook vermicelli per package directions; drain; return to pan and toss with chicken broth.
  2. Preheat oven to 350. Stir together turkey, soups, sour cream, mushrooms, parmesan, salt and pepper. Add Vermicelli and toss well.
  3. Spoon the mixture into a lightly greased 13x9 deep baking dish.
  4. Sprinkle with cheddar cheese.
  5. Bake, covered at 350 for 30 minutes; uncover and bake 5 more minutes or until cheese is bubbly.
