This recipe makes me think of the one time in my life that I knew someone half-way famous (the Oklahoma Governor) and, believe it or not, when we went to the Governor's Mansion for dinner, this is what they served! And, yes, there was a swimming pool in the shape of Oklahoma. :) This particular recipe comes from Southern Living's Comfort Food book without much modification.

Ingredients

  • 16 ounces vermicelli
  • 1/2 cup chicken broth
  • 4 cups chopped cooked turkey (or chicken if you prefer)
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 1 can cream of celery soup
  • 1 - 8 oz container of sour cream
  • 1 - 6 oz jar sliced mushrooms, drained
  • 1/2 cup shredded parmesan cheese
  • - salt and pepper to taste
  • 2 cups shredded cheddar cheese

How To Make turkey tetrazzini

  • Step 1
    Cook vermicelli per package directions; drain; return to pan and toss with chicken broth.
  • Step 2
    Preheat oven to 350. Stir together turkey, soups, sour cream, mushrooms, parmesan, salt and pepper. Add Vermicelli and toss well.
  • Step 3
    Spoon the mixture into a lightly greased 13x9 deep baking dish.
  • Step 4
    Sprinkle with cheddar cheese.
  • Step 5
    Bake, covered at 350 for 30 minutes; uncover and bake 5 more minutes or until cheese is bubbly.
