  • 2 clove
    garlic, crushed
  • 1/4 c
    olive oil
  • 1 Tbsp
    butter, melted
  • 1/2 lb
    prosciutto, chopped
  • 16 oz
    can whole tomatoes, undrained and chopped
  • 10 3/4 oz
    can tomato puree
  • 1 c
    chicken broth
  • 1/2 c
    grated romano cheese
  • 1 tsp
    dried whole oregano
  • 1 tsp
  • 1/4 c
    marsala wine
  • 2 pkg
    fresh cheese or meat-filled tortellini (8 ounces each)
  • 1/4 c
    grated romano cheese
  • 1 Tbsp
    butter, melted
  • 2 Tbsp
    chopped fresh parsley

How to Make Tortellini con Prosciutto


  1. Saute garlic in olive oil and 1 tablespoon melted butter in a large saucepan until golden brown. Add prosciutto and the next 6 ingredients; bring to a boil.
  2. Reduce heat, and simmer 15 to 20 minutes or until the mixture thickens. Add the wine, and cook 1 to 2 minutes.
  3. Cook tortellini according to package directions. Drain; place in a bowl. Add 1/4 cup Romano cheese and 1 tablespoon butter; toss.
  4. Pour the prosciutto mixture over the tortellini; toss. Sprinkle with parsley.
