tortellini and kielbasa (aka tortelbasa)

I invented this when I was only 13 years old to make for my younger brother..ever since it has been a family favorite. There are many ways to vary this recipe..my brother is now a vegetarian and uses a meat replacement. Saute peppers and onions with the kielbasa, or a drained can of sweet corn. You can also add more or less of the crushed red pepper flakes.

Ingredients

  • 1 package family size tortellini
  • 1 package turkey polska kielbasa or vegetarian sausage, sliced into half moon shape
  • 3 cloves chopped garlic
  • 3 pinches dry oregano
  • 3 pinches dry basil
  • 3 pinches dry parsley
  • 3 pinches dry thyme
  • 2 pinches crushed red pepper
  • - salt
  • - fresh cracked pepper
  • - olive oil, extra virgin
  • - parmesan cheese

How To Make tortellini and kielbasa (aka tortelbasa)

  • Step 1
    Kielbasa: In a large skillet heat up olive oil, place sausage in and brown..it is already cooked so you are just browning and heating through. Turn down heat, add garlic and spices.
  • Step 2
    Pasta: Boil in salted water..I'm pretty sure directions say for 7 minutes..I normally only do it for 5 or 6..I HATE over cooked pasta and it cooks a little more once you mix it into skillet with kielbasa. Once cooked strain and add to skillet with sausage. Toss around on low heat for several minutes. Turn off heat and add cheese to taste. If it seems a little dry add a drizzle of olive oil.
