This is like a pasta version of a Caprese sandwich! Simple and so good.

Ingredients

  • 1/2 pound fettuccine pasta
  • 2 - medium sized ripe tomatoes
  • 3 - cloves garlic, chopped
  • 6-8 - basil leaves, cut into thin ribbons
  • 2 tablespoons olive oil
  • - kosher salt and fresh ground pepper to taste
  • - parmesan cheese, grated

How To Make tomato basil pasta

  • Step 1
    Roughly chop the tomatoes and remove the seeds.
  • Step 2
    Put the tomatoes in a bowl with the garlic, basil and olive oil.
  • Step 3
    Season with salt and pepper.
  • Step 4
    Drain pasta, add to bowl and toss well with tomato mixture.
  • Step 5
    Top with tomato, parmesan cheese and another few grinds of pepper.
