Ingredients
- 12 ounces pasta of choice (curly pasta works well here to carry the sauce)
- salt
- 1 tablespoon olive oil
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- salt and pepper
- 1 teaspoon oregano
- 1/4 cup water
- 3/4 cup heavy cream
- 3/4 cup freshly shredded mozzarella
- 1 tablespoon butter
- shaved Parmesan, for serving
- chopped fresh basil, for serving
How To Make tomato basil pasta

Step 1Cook the pasta in salted water. Drain, reserving 2 tbsp pasta water.

Step 2Place the olive oil in a sauce pan. Add the garlic and saute 30 seconds. Add the tomato paste and stir to combine. Add the salt, pepper and oregano.

Step 3Stir in the water and heavy cream. Stir and simmer to reduce a bit and thicken, about 5 minutes. Add the mozzarella cheese and cook until melted and smooth. Stir in the butter.

Step 4Add the pasta water and pasta and mix. Place on plates and top with Parmesan and basil.
