Ingredients

  • 2 cups mini penne pasta
  • 1 tablespoon olive oil
  • 2 small shallots minced
  • 4 cloves garlic minced
  • 3 tablespoons tomato paste
  • 1 1/2 cups heavy cream
  • 1 teaspoon oregano
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • salt and pepper
  • 1/4 cup fresh basil chopped

How To Make tomato basil pasta

  • Step 1
    Bring a pot of salted water to a boil. Add the penne pasta and cook for 15 minutes. Meanwhile add oil to a saucepan.
  • Step 2
    Add the shallots and garlic and saute until tender. Stir in the tomato paste. Add the heavy cream.
  • Step 3
    Add the Mozzarella and Parmesan cheese and cook until melted add the oregano. Drain the pasta reserving 1/2 cup pasta water.
  • Step 4
    Add the penne to the sauce and use a little pasta water to help the sauce adhere to the pasta. Taste and adjust for salt and pepper.
  • Step 5
    Stir in the basil and serve
