Ingredients
- 2 cups mini penne pasta
- 1 tablespoon olive oil
- 2 small shallots minced
- 4 cloves garlic minced
- 3 tablespoons tomato paste
- 1 1/2 cups heavy cream
- 1 teaspoon oregano
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- salt and pepper
- 1/4 cup fresh basil chopped
How To Make tomato basil pasta

Step 1Bring a pot of salted water to a boil. Add the penne pasta and cook for 15 minutes. Meanwhile add oil to a saucepan.

Step 2Add the shallots and garlic and saute until tender. Stir in the tomato paste. Add the heavy cream.

Step 3Add the Mozzarella and Parmesan cheese and cook until melted add the oregano. Drain the pasta reserving 1/2 cup pasta water.

Step 4Add the penne to the sauce and use a little pasta water to help the sauce adhere to the pasta. Taste and adjust for salt and pepper.

Step 5Stir in the basil and serve
