If I had to pick a recipe that was my favorite, it would have to be this one. Given me by a beloved friend, I have made it hundreds of times. Be sure to use the freshest basil and tomato you can find.

large ripe tomatos, diced
8 oz
brie cheese, rind removed and diced
1/2 c
chopped fresh basil
1/2 c
olive oil
4-6 clove
garlic...more if you like garlic
1 tsp
1 tsp
coarse ground pepper
1 lb
linguine pasta

How to Make Tomato, Basil and Brie Linguine


  • 1Combine first seven ingredients. Stir lightly to combine.
  • 2Let stand for 6 hours at room temperature
  • 31/2 hour before dining, cook linguine al dente.
  • 4Toss tomato mixture with the warm pasta. Let stand 15-20m min. before serving.
  • 5Serve with grated Asiago cheese and warm bread.
    A meal for the gods.....
