I love roasting tomatoes. It brightens their flavor and sweetens them so. This sauce is great on pizza, or pasta, as a dip for breadsticks, on a veggie omelet, in a soup etc. Play around with it and use its goodness where ever you wish!

  • 28 oz
    can of whole tomatos
  • 10
    garlic cloves, crushed
  • 2
    anchovy fillets (packed in oil)
  • 1/2 stick
    salted butter
  • 1/2 tsp
    red pepper flakes (or according to taste)
  • 1/2 tsp
    dry mustard
  • 1/2 tsp
  • ·
    salt and freshly cracked black pepper

How to Make Tina's Roasted Tomato Sauce for Pasta or Pizza


  1. Place the tomatoes in a 9x13 pan and carefully crush them up with your hands. Add the fillets, dry mustard, sugar, butter and red pepper flakes. Season with salt and pepper
  2. Bake uncovered in a 450 degree oven for 20 minutes. Remove and toss contents around in pan. nto oven and bake another 20 minutes until the tomatoes get thick and syrupy like a fruit preserve.
  3. remove from oven and mash any big chunks of tomato and garlic remaining.
