tina's roasted tomato sauce for pasta or pizza
I love roasting tomatoes. It brightens their flavor and sweetens them so. This sauce is great on pizza, or pasta, as a dip for breadsticks, on a veggie omelet, in a soup etc. Play around with it and use its goodness where ever you wish!

Ingredients
- 28 ounces can of whole tomatos
- 10 - garlic cloves, crushed
- 2 - anchovy fillets (packed in oil)
- 1/2 stick salted butter
- 1/2 teaspoon red pepper flakes (or according to taste)
- 1/2 teaspoon dry mustard
- 1/2 teaspoon sugar
- - salt and freshly cracked black pepper
How To Make tina's roasted tomato sauce for pasta or pizza

Step 1Place the tomatoes in a 9x13 pan and carefully crush them up with your hands. Add the fillets, dry mustard, sugar, butter and red pepper flakes. Season with salt and pepper

Step 2Bake uncovered in a 450 degree oven for 20 minutes. Remove and toss contents around in pan. nto oven and bake another 20 minutes until the tomatoes get thick and syrupy like a fruit preserve.

Step 3remove from oven and mash any big chunks of tomato and garlic remaining.
