texican sausage casserole
I created this sausage casserole recipe, calling it "Texican" because it's filled with three kinds of sausages from Texas and Mexico: smoked, jalapeno cheddar and chorizo. Hearty penne pasta and a creamy sharp cheddar queso make this so delicious.

Ingredients
- CASSEROLE
- 1 package jalapeno cheddar sausages, cut into 1/2-inch pieces
- 2 teaspoons red pepper flakes
- 1 pound dried penne pasta
- 1 tablespoon avocado oil
- 1 pound chorizo sausage, casings removed and crumbled
- 1 large vidalia sweet onion, peeled and sliced
- 2 banana peppers, chopped
- 1 pound pork smoked sausage, cut into 1/4-inch pieces
- 1 packet taco seasoning
- 1 cup shredded extra sharp cheddar cheese
- SHARP CHEDDAR QUESO
- 1 tablespoon margarine
- 1 cup heavy cream
- 1/2 cup half and half
- 8 ounces cream cheese, softened
- 1 can diced tomatoes and green chilies, drained
- 1 cup shredded sharp cheddar cheese
How To Make texican sausage casserole

Step 1Preheat oven to 350 degrees F.

Step 2To make the casserole, coat a 9x13-inch baking dish with cooking spray. Add sliced jalapeno cheddar sausages. Season with red pepper flakes.

Step 3Bring a large pot of lightly salted water to boil over high heat. Add the penne pasta and cook until tender, about 9 minutes. Drain and set aside.

Step 4Heat the avocado oil in a large deep skillet over medium heat. Add the chorizo sausages and saute for 5 minutes or until browned and crumbled. Use a slotted spoon to transfer to a large plate and set aside.

Step 5Add the sliced vidalia onion, chopped banana peppers and sliced smoked sausages in same skillet with the chorizo oil. Saute for 6 minutes. Season with taco seasoning. Remove from heat.

Step 6To make the sharp cheddar queso, heat the margarine in a large saucepan over medium heat. Add the heavy cream, half and half, cream cheese, diced tomatoes and green chilies and shredded sharp cheddar cheese. Stir to combine and simmer for 8 minutes until thickened. Remove from heat.

Step 7Add the crumbled chorizo sausages, cooked penne pasta, and the smoked sausage mixture; mix well until combined.

Step 8Pour into the prepared baking dish evenly. Sprinkle with shredded extra sharp cheddar cheese.

Step 9Bake for 30 minutes or until golden brown. Let stand for 10 minutes before serving.
