Ingredients For tex-mex pasta salad

  • 1 lb
    rotini pasta
  • 1 can
    corn, drained
  • 1 can
    sliced black olives
  • 1 can
    black beans, drained
  • 1 md
    green bell pepper, chopped
  • 2 md
    tomatoes, chopped
  • 1 pkg
    shredded colby and jack cheese
  • 1 pkg
    cream cheese, room temperature
  • 1 jar
    salsa, chunky
  • 1/2 c
    fresh parsley, chopped

How To Make tex-mex pasta salad

  • 1
    Cook pasta according to directions. Run under cold water and drain. In a large bowl, add pasta, corn, black beans, black olives, bell pepper and tomatoes. Gently toss salad.

    In a food processor, combine cream cheese, salsa and parsley until blended. Gently add to pasta and mix.

    Sprinkle pasta salad with shredded cheese. Serve immediately, or chill and serve later.
