Ingredients
- 1 pound rotini pasta
- 1 can corn, drained
- 1 can sliced black olives
- 1 can black beans, drained
- 1 medium green bell pepper, chopped
- 2 medium tomatoes, chopped
- 1 package shredded colby and jack cheese
- 1 package cream cheese, room temperature
- 1 jar salsa, chunky
- 1/2 cup fresh parsley, chopped
How To Make tex-mex pasta salad

Step 1Cook pasta according to directions. Run under cold water and drain. In a large bowl, add pasta, corn, black beans, black olives, bell pepper and tomatoes. Gently toss salad.

Step 2In a food processor, combine cream cheese, salsa and parsley until blended. Gently add to pasta and mix.

Step 3Sprinkle pasta salad with shredded cheese. Serve immediately, or chill and serve later.
