I love trying new things! Hubby was my "Guinea Pig" & he LOVED it! He had 3 servings!! Makes quite a bit!!

Ingredients

  • 1 pound ground beef
  • 1 cup chopped onion
  • 1 cup sweet corn (frozen)
  • 4 ounces diced green chile peppers, drained
  • 1 package taco seasoning (1.25oz)
  • 1 pound penne pasta (1 box)
  • 4 ounces sliced black olives, drained
  • 1 cup shredded monterey jack cheese (divided)

How To Make taco penne skillet

  • Step 1
    Cook beef over med-high until brown. Stir in onion & corn. Cook for 3 minutes or until tender. Add peppers, taco seasoning & COOKED pasta to beef mixture. Cook for 3-5 mins or until pasta is heated thoroughly, stirring occationaly. Remove from heat & stir in black olives & 1/2 cup of cheese. Top pasta with remaining 1/2 cheese before serving. For added flavor serve with diced tomatoes, chopped cilantro & sour cream.
