I love to make the soft tacos and they go great with Macaroni and cheese. So I decided to put them all together and they turned out really good

prep time 35 Min
cook time 20 Min
method ---
yield 4-6 serving(s)

Ingredients

  • 8 ounces dry macaroni shells
  • 6 slices velveeta cheese - cut thick
  • 8 ounces shredded cheddar cheese
  • 1/4 cup milk
  • 1 pound hamburg
  • 1 package taco seasoning mix ( i use mild)
  • 3/4 cup water
  • 3 - flour tortillas
  • 1/4 cup salsa

How To Make taco/mac and cheese bake

  • Step 1
Cook macaroni according to directions on box, and drain - leave in colander
  • Step 2
Add milk, velveeta and 2/3 cups of the shredded cheese to the pot you boiled your macaroni in, melt cheese under low heat - I usually salt and pepper the milk and cheese mixture a little bit.
  • Step 3
Add the macaroni back into the milk and cheese mixture, Stir and take off the heat. Cover
  • Step 4
Brown your ground beef, add the taco mix and water, stir and simmer for 10 minutes - or until it thickens slightly - Turn off the burner and let sit
  • Step 5
Grease a 8x8 or larger baking dish with margerine or butter, add your macaroni and cheese
  • Step 6
Put a flour tortilla over it -- you can section the tortilla rounds to fit the dish you are using
  • Step 7
Add the hamburg/taco mixture and the salsa
  • Step 8
Sprinkle shredded cheese over the mixture - reserving some shredded cheese for the top
  • Step 9
Add another tortilla to cover the mixture
  • Step 10
Cover with shredded cheddar and bake in a 375 degree oven for 20 minutes or until the cheese is melted and the tortilla is browning.
