swiss chard lasagna

I don't especially like meat Lasagna's so I have tried to make different vegetable Lasagna's and this one is one of my favorites.

Ingredients

  • 6 - no-boil lasagna noodles
  • 3 tablespoons extra-virgin olive oil
  • 1 bunch swiss chard, finely chopped, leaves and stems separated
  • 4 cloves garlic, chopped
  • 1 cup ricotta cheese
  • 1 1/4 cups heavy whipping cream
  • 1 large egg
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 7 ounces asiago cheese, grated
  • 1/2 cup fresh mozzarella cheese, grated
  • - salt and pepper to taste

How To Make swiss chard lasagna

  • Step 1
    In a large bowl of hot water soak the lasagna noodles until soft, about 10 minutes.
  • Step 2
    Mean while heat olive oil in a large skillet over medium heat.
  • Step 3
    Add chard stems and garlic.Cook until golden about 4 minutes.
  • Step 4
    Add the chard leaves and cook until wilted about 3 more minutes.
  • Step 5
    In a separate bowl mix together the ricotta,cream,egg Parmesan,basil,salt and pepper.
  • Step 6
    Brush a 3qt baking dish with oil and add 3 noodles in a single layer.
  • Step 7
    Top with half the ricotta mixture, then the chard and Asiago cheese.
  • Step 8
    Repeat.
  • Step 9
    Cover with foil and Bake at 350 for 20 minutes.
  • Step 10
    Remove foil and top with Mozzarella cheese and continue to bake for another 5 minutes or until cheese is bubbly and golden brown.
  • Step 11
    Remove from oven and let set for 5 minutes then serve.
