sunday gravy for pasta

This is a take off from Rene Graziano's (Mofia Wives) gravy recipe. I've made a few changes and we're pretty satisfied with it now. Great with Italian sausages or meatballs made with beef, pork and veal. If you can't find, or don't want to use veal I substitute ground turkey. I'm going to post the meatball recipe also that goes so well with this.

Ingredients
- 2 tablespoons olive oil
- 2 cups chopped onion
- 2 tablespoons chopped garlic
- 1/4 cup cup fresh parsley, chopped
- 2 tablespoons mrs. dash italian seasoning
- 3 sprigs thyme
- 1/2 teaspoon sea salt
- 1/2 teaspoon freshly ground pepper
- 28 ounces can crushed tomatoes
- 3-28 ounces cans whole roma tomatoes
- 6 ounces tomato paste
- 2 small bay leaves
- 1 tablespoon sugar, or to taste
How To Make sunday gravy for pasta

Step 1heat olive oil over medium heat in a stock pot; add the onions and cook until slightly soft; add the garlic and cook a few more minutes until it is soft. Do not let it get brown.

Step 2Add the parsley and all the seasonings, except the bay leaf and stir to combine.

Step 3Add the whole tomatoes, breaking them up with your fingers, or use a potato masher to help break into pieces; add the crushed tomaotes and the tomato paste; add the bay leaf.

Step 4Simmer for about 15 minutes. Taste at this point and sugar as tastes dictate. Now you will add your meatballs if using. Continue on top of the stove for about 1-1/2 to 2 hours.
