Summer penne with Chevre
Ingredients

·butter

1 boxof penne pasta

6-7large shallots, chopped
-
1small package of pine nuts

1/4 cchopped, fresh basil

·light olive oil
-
4 ozchevre or goat cheese
How to Make Summer penne with Chevre
- Boil pasta until al dente (add oil and salt to water)
In a large pan, melt 3 tablespoons butter with 1 tablespoon olive oil
Add chopped shallots, cook until brown or caramelized
Chop basil
Drain pasta
Add a little bit of light olive oil, the goat cheese, pine nuts, basil, salt & pepper
