This makes a simple, but elegant meal when served with a tossed salad. It is a great way to use that little bit of leftover pasta and sauce. It is easy to double the recipe.

Ingredients
- 2 large portabella mushrooms
- 2 cups cooked pasta, divided
- 1/2 cup jarred pasta sauce or your favorite homemade
- 4 tablespoons grated parmesan
How To Make stuffed portabella mushrooms

Step 1Remove gills and stems from mushrooms. Place on a foil-lined baking sheet. I also make a foil collar for each mushroom (It helps me keep the rest of the ingredients in place)

Step 2Bake for 12 minutes. remove from oven.

Step 3Place 3/4 to 1 cup of pasta on each cap.

Step 4Smother with pasta sauce.

Step 5Sprinkle with parmesan.

Step 6Return to oven for 7 minutes or until heated through and parm is golden brown. Serve.
