This makes a simple, but elegant meal when served with a tossed salad. It is a great way to use that little bit of leftover pasta and sauce. It is easy to double the recipe.

Ingredients

  • 2 large portabella mushrooms
  • 2 cups cooked pasta, divided
  • 1/2 cup jarred pasta sauce or your favorite homemade
  • 4 tablespoons grated parmesan

How To Make stuffed portabella mushrooms

  • Step 1
    Remove gills and stems from mushrooms. Place on a foil-lined baking sheet. I also make a foil collar for each mushroom (It helps me keep the rest of the ingredients in place)
  • Step 2
    Bake for 12 minutes. remove from oven.
  • Step 3
    Place 3/4 to 1 cup of pasta on each cap.
  • Step 4
    Smother with pasta sauce.
  • Step 5
    Sprinkle with parmesan.
  • Step 6
    Return to oven for 7 minutes or until heated through and parm is golden brown. Serve.
