Ingredients

manicotti
10 oz
spinach, thawed and drained
1/2 c
onion, finely chopped
2 Tbsp
chicken bouillon
1
garlic clove, minced
1/4 tsp
thyme
2 c
ricotta cheese
2
eggs, beaten
1/2 c
parmesan cheese, grated
1/2 tsp
oregano
6 oz
mushrooms, sliced

ALTERNATE FILLING

1.5 lb
ground beef
1
egg, beaten
1/2 lb
mozzarella cheese, diced
3 small
bread, torn in pieces
1/2 c
milk
1 large
garlic clove, minced
1/4 tsp
thyme
1/2 tsp
oregano

How to Make Stuffed Manicotti

Step-by-Step

  • 1Cook manicotti; drain
  • 2Mix onion, spinach, bouillon, garlic, thyme, ricotta, eggs, parmesan cheese, oregano and 1/2 the mushrooms.
  • 3Fill manicotti shells with spinach mixture.
  • 4Arrange in greased 9x13 baking dish.
  • 5Pour tomato sauce and remaining mushrooms over manicotti.
  • 6Sprinkle with oregano.
  • 7Cover with mozzarella.
  • 8Cover and cook at 350 degrees until hot and bubbly, about 25 minutes.
  • 9ALTERNATE FILLING
  • 10Brown meat in skillet; drain.
  • 11Mix with all other ingredients.
  • 12Stuff manicotti with meat mixture.
  • 13Proceed as in first recipe.
