Ingredients
- 8 ounces manicotti
- 10 ounces spinach, thawed and drained
- 1/2 cup onion, finely chopped
- 2 tablespoons chicken bouillon
- 1 - garlic clove, minced
- 1/4 teaspoon thyme
- 2 cups ricotta cheese
- 2 - eggs, beaten
- 1/2 cup parmesan cheese, grated
- 1/2 teaspoon oregano
- 6 ounces mushrooms, sliced
- ALTERNATE FILLING
- 1.5 pounds ground beef
- 1 - egg, beaten
- 1/2 pound mozzarella cheese, diced
- 3 small bread, torn in pieces
- 1/2 cup milk
- 1 large garlic clove, minced
- 1/4 teaspoon thyme
- 1/2 teaspoon oregano
How To Make stuffed manicotti

Step 1Cook manicotti; drain

Step 2Mix onion, spinach, bouillon, garlic, thyme, ricotta, eggs, parmesan cheese, oregano and 1/2 the mushrooms.

Step 3Fill manicotti shells with spinach mixture.

Step 4Arrange in greased 9x13 baking dish.

Step 5Pour tomato sauce and remaining mushrooms over manicotti.

Step 6Sprinkle with oregano.

Step 7Cover with mozzarella.

Step 8Cover and cook at 350 degrees until hot and bubbly, about 25 minutes.

Step 9ALTERNATE FILLING

Step 10Brown meat in skillet; drain.

Step 11Mix with all other ingredients.

Step 12Stuff manicotti with meat mixture.

Step 13Proceed as in first recipe.
