Ingredients

  • 8 ounces manicotti
  • 10 ounces spinach, thawed and drained
  • 1/2 cup onion, finely chopped
  • 2 tablespoons chicken bouillon
  • 1 - garlic clove, minced
  • 1/4 teaspoon thyme
  • 2 cups ricotta cheese
  • 2 - eggs, beaten
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon oregano
  • 6 ounces mushrooms, sliced
  • ALTERNATE FILLING
  • 1.5 pounds ground beef
  • 1 - egg, beaten
  • 1/2 pound mozzarella cheese, diced
  • 3 small bread, torn in pieces
  • 1/2 cup milk
  • 1 large garlic clove, minced
  • 1/4 teaspoon thyme
  • 1/2 teaspoon oregano

How To Make stuffed manicotti

  • Step 1
    Cook manicotti; drain
  • Step 2
    Mix onion, spinach, bouillon, garlic, thyme, ricotta, eggs, parmesan cheese, oregano and 1/2 the mushrooms.
  • Step 3
    Fill manicotti shells with spinach mixture.
  • Step 4
    Arrange in greased 9x13 baking dish.
  • Step 5
    Pour tomato sauce and remaining mushrooms over manicotti.
  • Step 6
    Sprinkle with oregano.
  • Step 7
    Cover with mozzarella.
  • Step 8
    Cover and cook at 350 degrees until hot and bubbly, about 25 minutes.
  • Step 9
    ALTERNATE FILLING
  • Step 10
    Brown meat in skillet; drain.
  • Step 11
    Mix with all other ingredients.
  • Step 12
    Stuff manicotti with meat mixture.
  • Step 13
    Proceed as in first recipe.
