vegetable oil
1/2 lb
lasagna noodles
garlic cloves, minced
1 medium
onion, chopped
tomatoes, chopped
10 medium
mushrooms, sliced
1/2 tsp
1/2 tsp
1/2 tsp
2 Tbsp
parsley, fresh and chopped
1 lb
spinach, trimmed, washed
1 c
cottage cheese
1/2 c
parmesan cheese, grated
8 oz
mozzarella cheese, grated

How to Make Spinach Lasagna


  • 1Cook noodles until al dente; drain and set aside.
  • 2Preheat oven to 350.
  • 3Heat oil in a large skillet and saute onion, garlic, tomatoes and mushrooms; when onion is translucent, add herbs.
  • 4Chop the spinach and add to the skillet and stir until it is wilted; simmer.
  • 5Reserving 1/2 cup mozzarella, in a large bowl combine the cheeses; pour vegetables into the cheese mixture and mix thoroughly.
  • 6Layer noodles alternately with the vegetable-cheese in an 8x13-inch baking pan.
  • 7Top with reserved mozzarella and bake for 30 minutes; let sit for 5 to 10 minutes before serving.
