Ingredients

  • 3 Tbsp
    vegetable oil
  • 1/2 lb
    lasagna noodles
  • 2
    garlic cloves, minced
  • 1 medium
    onion, chopped
  • 2
    tomatoes, chopped
  • 10 medium
    mushrooms, sliced
  • 1/2 tsp
    oregano
  • 1/2 tsp
    basil
  • 1/2 tsp
    rosemary
  • 2 Tbsp
    parsley, fresh and chopped
  • 1 lb
    spinach, trimmed, washed
  • 1 c
    cottage cheese
  • 1/2 c
    parmesan cheese, grated
  • 8 oz
    mozzarella cheese, grated

How to Make Spinach Lasagna

Step-by-Step

  1. Cook noodles until al dente; drain and set aside.
  2. Preheat oven to 350.
  3. Heat oil in a large skillet and saute onion, garlic, tomatoes and mushrooms; when onion is translucent, add herbs.
  4. Chop the spinach and add to the skillet and stir until it is wilted; simmer.
  5. Reserving 1/2 cup mozzarella, in a large bowl combine the cheeses; pour vegetables into the cheese mixture and mix thoroughly.
  6. Layer noodles alternately with the vegetable-cheese in an 8x13-inch baking pan.
  7. Top with reserved mozzarella and bake for 30 minutes; let sit for 5 to 10 minutes before serving.
