Ingredients

  • 12 ounces spinach fettuccine
  • 1 tablespoon olive oil
  • 1/2 cup sliced red onion
  • 2 cloves garlic, minced
  • 2 cups asparagus cut into 1-inch pieces
  • 1 - medium carrot, cut diagonally into 1/4-inch-thick slices
  • 1 cup sliced mushrooms, any kind
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 28 ounces can diced tomatoes
  • 1 cup mozzarella cheese, shredded

How To Make spinach fettuccine with veggies and cheese

  • Step 1
    Cook the pasta according to the package directions, then drain.
  • Step 2
    Meanwhile, heat the oil in a large skillet over medium heat. Add the onion and garlic and cook, stirring, for 1 minute. Add the asparagus, carrot, and mushrooms and cook, stirring a few times, until the vegetables are crisp-tender, about 5 minutes. Add the salt and pepper, stir to coat.
  • Step 3
    Add tomatoes and cooked fettuccine to vegetable medley. Simmer for 2 minutes. Serve topped with mozzarella cheese.
