If you can find quail eggs you can use regular eggs but you would have to poach them first.The quail eggs are so small that they cook in the hot broth

Ingredients

  • 2 boneless skinless chicken thighs cut into cubes
  • 1 tablespoon tomato paste
  • 3 tablespoons shrimp paste
  • 1 tablespoon chili garlic paste
  • 1 tablespoon peanut oil
  • 1 small carrot thinly sliced
  • 2 scallions chopped
  • 2 packages ramen noodles
  • 3 cups water
  • 4 quail eggs
  • fresh cilantro for garnish

How To Make spicy shrimp paste chicken ramen

  • Step 1
    Place water in a large pot. Add the seasoning packets from the Ramen noodles. Place the oil in a wok or saucepan. Add the chicken and cook 3 minutes. Stir in the tomato paste, shrimp paste and chili garlic paste. Add a little of the Ramen water to the chicken mixture just to thin it out.
  • Step 2
    Add the noodles, scallions, and carrots to the pot with water. Cook 3 minutes. Stir in the chicken mixture. Bring to a boil. Remove from heat and crack the quail eggs into the hot broth.
  • Step 3
    Serve immediately garnished with cilantro.
