Ingredients
- 8 ounces linguine pasta
- 1/3 cup peanut butter, creamy
- 1/4 cup water
- 2 tablespoons soy sauce, low sodium
- 1 1/2 tablespoons rice wine vinegar
- 1 - 2 teaspoons chile paste
- 4 - 5 cloves garlic, minced
- 1 teaspoon sugar
- 1 small red bell pepper, cut into thin strips
- 3/4 cup cucumber, seeded & chopped
- 1/4 cup green onions, (both greens & whites) sliced diagonally into 1/4
- 2 tablespoons cilantro, fresh, chopped
- 4 - lime wedges (optional)
How To Make spicy peanut noodles

Step 1Cook linguine according to package directions.

Step 2Meanwhile, combine peanut butter, water, soy sauce, vinegar, chile paste & sugar in a large bowl; whisk until blended. If sauce seems too thick, thin it with a little more water; it should have the consistency of cream.

Step 3Add linguine, bell pepper, cucumber & green onions & toss well. Sprinkle with cilantro. Serve with lime wedges, if desired.
