Ingredients
- 1 pound vermicelli pasta
- 2 tablespoons olive or canola oil
- 1 teaspoon minced garlic
- 13 - roma tomatoes, chopped.
- 1-1/2 teaspoon salt
- 1 tablespoon chopped fresh parsley
- 1 tablespoon cajun seasoning
- 1/2 cup reduced-fat, shredded mozzarella cheese
- 1/2 cup reduced-fat, grated parmesan cheese
How To Make spicy cajun pasta

Step 1Cook pasta as directed, drain, keep warm. In lg skillet, over medium heat, saute garlic in oil until fragrant. Stir in tomatoes and their juices. Sprinkle w/ salt. Cook until tomatoes are bubbly, mash slightly w/ fork. Stir in parsley and simmer 5 min. gently stir in Cajun seasoning. Toss pasta w/ tomato mix, mozzarella cheese and parmesan cheese.
