  • 1 lb
    vermicelli pasta
  • 2 Tbsp
    olive or canola oil
  • 1 tsp
    minced garlic
  • 13
    roma tomatoes, chopped.
  • 1-1/2 tsp
  • 1 Tbsp
    chopped fresh parsley
  • 1 Tbsp
    cajun seasoning
  • 1/2 c
    reduced-fat, shredded mozzarella cheese
  • 1/2 c
    reduced-fat, grated parmesan cheese

How to Make Spicy Cajun pasta


  1. Cook pasta as directed, drain, keep warm. In lg skillet, over medium heat, saute garlic in oil until fragrant. Stir in tomatoes and their juices. Sprinkle w/ salt. Cook until tomatoes are bubbly, mash slightly w/ fork. Stir in parsley and simmer 5 min. gently stir in Cajun seasoning. Toss pasta w/ tomato mix, mozzarella cheese and parmesan cheese.
