Ingredients

  • 1 pound vermicelli pasta
  • 2 tablespoons olive or canola oil
  • 1 teaspoon minced garlic
  • 13 - roma tomatoes, chopped.
  • 1-1/2 teaspoon salt
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon cajun seasoning
  • 1/2 cup reduced-fat, shredded mozzarella cheese
  • 1/2 cup reduced-fat, grated parmesan cheese

How To Make spicy cajun pasta

  • Step 1
    Cook pasta as directed, drain, keep warm. In lg skillet, over medium heat, saute garlic in oil until fragrant. Stir in tomatoes and their juices. Sprinkle w/ salt. Cook until tomatoes are bubbly, mash slightly w/ fork. Stir in parsley and simmer 5 min. gently stir in Cajun seasoning. Toss pasta w/ tomato mix, mozzarella cheese and parmesan cheese.
