Ingredients

  • 1 pound spaghetti
  • 1/4 cup butter at room temp
  • 1 1/4 cups pecorino romano cheese freshly grated
  • 1 cup fresh arugula
  • salt
  • freshly ground black pepper for serving

How To Make spaghetti with pecorino romano & arugula

  • Step 1
    Bring a large pot of water to a rolling boil. At the salt enough to make it taste like the sea. Bring back to a rolling boil. Add the spaghetti and cook until al dente.
  • Step 2
    Drain reserving one cup of pasta water. Place the spaghetti in a bowl. Add the butter and cheese and stir until both are melted. Stir in the arugula.
  • Step 3
    Serve with freshly ground black pepper
