Ingredients

  • 1/2 c
    sun dried tomatoes
  • 1 c
    boiling water
  • ·
    cooking spray
  • 1/2
    onion, sliced
  • 1 c
    peas, frozen petite
  • 1/2 c
    chicken broth
  • 2 tsp
    olive oil
  • 1/4 lb
    spaghetti, uncooked
  • 1/2 c
    basil, fresh chopped
  • ·
    "just a pinch" of salt
  • ·
    "just a pinch" of pepper

How to Make Spaghetti with Peas and Sun-Dried Tomatoes

Step-by-Step

  1. Place pot with 2-3 quarts of water on to boil for spaghetti.
  2. Cut sun-dried tomatoes into small pieces. Pour boiling water over them and let sit 5 minutes or until needed.
  3. Spray a nonstick pan with olive oil spray and saute onions on medium high until soft, about 5 minutes.
  4. Drain tomatoes and add to onions.
  5. Add peas and chicken stock.
  6. Simmer 1 minute.
  7. Add oil and stir well.
  8. When large pot of water come to a boil, add spaghetti and boil for 10 minutes.
  9. Drain.
  10. In a serving bowl, toss spaghetti with vegetables.
  11. Sprinkle with basil and add salt and pepper to taste.
