Dottie came out to visit Joann and the puppies, and this was dinner 1-18-20. The smell of the sauce is just amazing! You can add a splash of wine in the sauce too if you want, rather than just in the mushrooms!

Ingredients
- 1 green pepper, minced fine
- 1 - onion, minced fine, sweet is ok, but she prefers yellow onions
- 2-3 stalks celery, minced fine
- 1 package italian sausage, she uses 1/2 package sweet and 1/2 package hot
- 2 pounds hamburger
- 1 large package sliced mushrooms
- bay leaves
- italian seasoning
- 1 can tomato paste
- 5-6 cans tomato sauce
- garlic
- red wine (she used oliver winery red)
- baking soda (see notes)
- 2 pounds pasta
- meatballs, prepared, optional

Step 1Mince and saute veggies, remove from pan, set aside. Saute meats (take the sausages out of the skins), leaving in rather large pieces. Drain. Return to pan with the veggies. Add tomato paste and sauces. Add garlic and seasonings. Add a splash of the wine. Add baking soda (a teaspoon per 5-6 1 cups servings...this was about 15 servings). Let simmer, covered, in stockpot, several hours.

Step 2Put olive oil and real butter in saute pan with a lid. Add in garlic and stir around. Then add in mushrooms, and a splash of the wine. About an hour before serving, add to the sauce.

Step 3Make the noodles, drain. Serve with sauce. Top with meatballs if you opted to use them...
