This is one of my favorite spaghetti recipes. It's just as good leftover. It is really flavorful.

Ingredients

  • 1 ounce extra virgin olive oil
  • 1 tablespoon minced fresh garlic
  • 2 ounces quarted mushrooms
  • 1/4 cup sweet onion
  • 2 pounds cherry tomatoes halved
  • 1/2 cup pitted kalamata black olives
  • 1/2 cup pitted green olives
  • 2 teaspoons capers, rinsed
  • 1/4 cup fresh basil chopped
  • 1 tablespoon fresh minced parsley
  • 1/2 teaspoon salt & pepper ea
  • 1/4 teaspoon red pepper flakes
  • 1 pound dry pasta
  • to taste ounce fresh parmesan cheese grated

How To Make spaghetti delle rocca

  • Step 1
    Saute garlic, onions, and mushrooms for 1 min, do not brown. Add remaining ingredients except Parmesan cheese, and saute for 5 min, stirring often.
  • Step 2
    Meanwhile cook pasta following box directions. In a large bowl combine sauce and pasta while both are hot. Top with Parmesan cheese and fresh basil leaves.
