Ingredients

1 ozextra virgin olive oil

1 Tbspminced fresh garlic

2 ozquarted mushrooms
-
1/4 csweet onion
-
2 lbcherry tomatoes halved
-
1/2 cpitted kalamata black olives
-
1/2 cpitted green olives
-
2 tspcapers, rinsed
-
1/4 cfresh basil chopped

1 Tbspfresh minced parsley
-
1/2 tspsalt & pepper ea
-
1/4 tspred pepper flakes
-
1 lbdry pasta
-
to taste ozfresh parmesan cheese grated
How to Make Spaghetti delle rocca
- Saute garlic, onions, and mushrooms for 1 min, do not brown. Add remaining ingredients except Parmesan cheese, and saute for 5 min, stirring often.
- Meanwhile cook pasta following box directions.
In a large bowl combine sauce and pasta while both are hot. Top with Parmesan cheese and fresh basil leaves.
