This is one of my favorite spaghetti recipes. It's just as good leftover. It is really flavorful.

Stove Top


  • 1 oz
    extra virgin olive oil
  • 1 Tbsp
    minced fresh garlic
  • 2 oz
    quarted mushrooms
  • 1/4 c
    sweet onion
  • 2 lb
    cherry tomatoes halved
  • 1/2 c
    pitted kalamata black olives
  • 1/2 c
    pitted green olives
  • 2 tsp
    capers, rinsed
  • 1/4 c
    fresh basil chopped
  • 1 Tbsp
    fresh minced parsley
  • 1/2 tsp
    salt & pepper ea
  • 1/4 tsp
    red pepper flakes
  • 1 lb
    dry pasta
  • to taste oz
    fresh parmesan cheese grated

How to Make Spaghetti delle rocca


  1. Saute garlic, onions, and mushrooms for 1 min, do not brown. Add remaining ingredients except Parmesan cheese, and saute for 5 min, stirring often.
  2. Meanwhile cook pasta following box directions.
    In a large bowl combine sauce and pasta while both are hot. Top with Parmesan cheese and fresh basil leaves.
