southwest skillet dinner
A spicy macaroni skillet dinner that I found on Muellers. Although the recipe doesn't call for it, you could probably add ground beef (I just followed the original recipe).

Ingredients
- 8 ounces elbow macaroni
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 2 cloves garlic, minced
- 2 tablespoons chili powder
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt (optional)
- 2 14 oz. cans diced tomatoes, undrained
- 1 15 oz. cans kidney beans, rinsed and drained
- 1 11 oz. cans corn, drained
- 1/2 cup shredded pepper jack cheese
How To Make southwest skillet dinner

Step 1Cook and drain pasta according to package directions.

Step 2Heat oil in a large skillet over medium-high heat; add onion, green pepper, garlic, chili powder, cumin and salt; cook, stirring occasionally, for 4 minutes, or until vegetables are tender.

Step 3Add tomatoes, kidney beans and corn; bring to a boil.

Step 4Reduce heat; simmer, stirring occasionally, for 15 minutes.

Step 5Toss with hot macaroni; sprinkle with cheese.
